VERMOUTH REDUCTION

FROM DISTILLATION

INGREDIENTS  AND TOOLS

7oo ml Vermouth Rosso

Fennel

Rotavapor

Bottle glass

Pour the Vermouth by using the fennel into the Rotavapor Flask

Set the bain-Marie 50 degree

Set chiller 0 degree 

Set the Rotavapor and gradually lower the mlb (millibar) until reach 40 mlb

Leave to distil 400 ml of  liquid has been achieved

Discard the 400 of clear liquid and bottle the remaining vermouth reduction
